Moreover, producing food today is incredibly stressful to the environment. Experiments with producing meat-like edible organisms in laboratories multiplied over the past few years. There&#8217;s a \u003Ca rel=\"noreferrer noopener\" href=\"https:\u002F\u002Fwww.cbinsights.com\u002Fresearch\u002Ffuture-of-meat-industrial-farming\u002F\" target=\"_blank\">$2.7 trillion global market\u003C\u002Fa> for meat (by 2040 at least), so no wonder startups and big players all want a slice of it. The competition is fierce. \u003C\u002Fp>\n\n\n\n\u003Cp>\u003Cstrong>Parallel to the increased interest in producing cultured or clean meat in laboratories, companies are multiplying like mushrooms in the field. Beyond Silicon Valley, scientists in Maastricht, Tel Aviv or Tokyo are experimenting with stem cells and the future of meat production while figuring out a way for mass production\u003C\u002Fstrong>.\u003C\u002Fp>\n\n\n\n\u003Cp>Today even fast-food chains use artificial meat, which is, in most cases, plant-based natural or lab-grown substitutes. Burger King&#8217;s \u003Ca rel=\"noreferrer noopener\" href=\"https:\u002F\u002Fwww.burgerking.co.uk\u002Fplant-based-options\" target=\"_blank\">plant-based meat options\u003C\u002Fa>, Taco Bell&#8217;s \u003Ca rel=\"noreferrer noopener\" href=\"https:\u002F\u002Fwww.foodandwine.com\u002Fnews\u002Ftaco-bell-plant-based-meat-cravetarian\" target=\"_blank\">Cravetarian\u003C\u002Fa> or McDonald&#8217;s \u003Ca rel=\"noreferrer noopener\" href=\"https:\u002F\u002Fvegnews.com\u002F2021\u002F2\u002Fmcdonalds-beyond-meat-sign-3-year-deal-to-launch-plant-based-options\" target=\"_blank\">McPlant\u003C\u002Fa> are all on this \u003Ca rel=\"noreferrer noopener\" href=\"https:\u002F\u002Fwww.thrillist.com\u002Fnews\u002Fnation\u002Fbest-plant-based-meat-items-from-fast-food-chains\" target=\"_blank\">endless list\u003C\u002Fa>. By now practically \u003Ca rel=\"noreferrer noopener\" href=\"https:\u002F\u002Fwww.today.com\u002Ffood\u002Fall-popular-fast-food-chains-offering-plant-based-meats-t171328\" target=\"_blank\">all the popular chains\u003C\u002Fa> have their meat alternatives.\u003C\u002Fp>\n\n\n\n\u003Ch2 class=\"wp-block-heading\">Plant-based vs. artificial meat\u003C\u002Fh2>\n\n\n\n\u003Cp>There are multiple ways to &#8220;fake&#8221; meat. Plant-based means creating the texture and the taste of meat with its key basic ingredients. &#8220;\u003Cem>There are four key elements to animal muscle – protein, fat, water, and glycogen – present in very specific proportions\u003C\u002Fem>,&#8221; Dariush Ajami, Beyond Meat&#8217;s chief innovation officer told \u003Ca rel=\"noreferrer noopener\" href=\"https:\u002F\u002Fwww.wellandgood.com\u002Falternative-meat-products\u002F\" target=\"_blank\">in an interview\u003C\u002Fa> of their solution. Beyond Meat went public at a valuation of almost $1.5B in 2019.\u003C\u002Fp>\n\n\n\n\u003Cp>But it&#8217;s already possible to create meat from a single meat cell in a lab. In general, the process is \u003Ca href=\"https:\u002F\u002Fmedicalfuturist.com\u002F3d-bioprinting-overview\">similar to 3D bioprinting\u003C\u002Fa>: scientists take a live animal’s adult muscle \u003Ca href=\"https:\u002F\u002Fgizmodo.com\u002Fbehind-the-hype-of-lab-grown-meat-1797383294\">stem cells\u003C\u002Fa> and set them in a nutrient-rich liquid to allow them to grow around scaffolds to help them achieve the desired shape.\u003C\u002Fp>\n\n\n\n\u003Cp>Researchers of the \u003Ca href=\"https:\u002F\u002Fculturedbeef.org\u002F\">Cultured Beef Project\u003C\u002Fa> remove muscle cells from the shoulder of a cow and feed the cells with a nutrient mix in a Petri dish, and they grow into muscle tissue. From a few starter cells, one can derive tons of meat. And Silicon Valley-based \u003Ca rel=\"noreferrer noopener\" href=\"https:\u002F\u002Ftwitter.com\u002Ffinlessfoods\" target=\"_blank\">Finless Foods\u003C\u002Fa> is promising to produce real fish meat out of stem cells to create more sustainable seafood.\u003C\u002Fp>\n\n\n\n\u003Ch2 class=\"wp-block-heading\">M\u003Cstrong>ass production of cultured foie gras or synthetic chorizo?\u003C\u002Fstrong>\u003C\u002Fh2>\n\n\n\n\u003Cp>How far are these companies from mass production? No one knows for sure. The technology to produce complex meat sorts, for example the creation of steaks or hamburgers (meat not only with muscle tissues but connective tissues or fat cells in perfect harmony) is mind-blowingly difficult. Besides, production costs are incredibly high. In 2013, the price of lab-grown meat for a hamburger was $325,000. The market expanded significantly over the past years, as plant-based consumption grew due either to a health-based dietary choice or to environmental consciousness (remember the sad fact: of all the mammals in the world today, \u003Ca rel=\"noreferrer noopener\" href=\"https:\u002F\u002Fwww.independent.co.uk\u002Fclimate-change\u002Fnews\u002Fveganism-meat-environmental-impact-diet-b1901628.html\" target=\"_blank\">96% is livestock\u003C\u002Fa>). Eating vegan seems to be a climate-change issue, too. \u003C\u002Fp>\n\n\n\n\u003Cp>There are hundreds of brands producing dairy products (\u003Ca rel=\"noreferrer noopener\" href=\"https:\u002F\u002Fwww.womenshealthmag.com\u002Ffood\u002Fg29648044\u002Fvegan-cheese-brands\u002F\" target=\"_blank\">in this article\u003C\u002Fa> staff tested over 80 of them). California-based \u003Ca rel=\"noreferrer noopener\" href=\"https:\u002F\u002Fperfectdayfoods.com\u002F\" target=\"_blank\">Perfect Day\u003C\u002Fa> creates milk, cheese and ice cream without cows. Having an entire cow just to produce milk is inefficient, they claim, so the company is using a cow&#8217;s milk gene, reproducing it with a fungus. A disgusting bowl of proteins with minerals, vitamins, and nutrients: “\u003Cem>\u003Ca rel=\"noreferrer noopener\" href=\"https:\u002F\u002Fwww.youtube.com\u002Fwatch?v=2oEnJfZ9joY\" target=\"_blank\">everything the body needs\u003C\u002Fa>\u003C\u002Fem>.” Indeed, a meal replacement powder mixed with water that contains all the nutrition necessary for an average adult is a viable solution for many.\u003C\u002Fp>\n\n\n\n\u003Cp>The main obstacle to artificial food becoming widespread is not technology or money, but people’s strong stance against meals coming from laboratories. That’s even the case with projects that actually use fresh ingredients with state-of-the-art technology, such as the Foodini 3D food printer created by \u003Ca rel=\"noreferrer noopener\" href=\"https:\u002F\u002Fwww.naturalmachines.com\u002F\" target=\"_blank\">Natural Machines\u003C\u002Fa>. Lynette Kucsma, Co-Founder and CMO \u003Ca href=\"https:\u002F\u002Fmedicalfuturist.com\u002Fthe-future-of-food-the-food-of-the-future\u002F\">told\u003C\u002Fa> The Medical Futurist that “\u003Cem>usually, haters think we are forcing people to buy pre-filled food capsules and\u002For that we are making highly processed foods. Not the case at all, but quite the opposite. Once people understand that we are focused on helping people eat healthier by preparing more of their foods with fresh, real ingredients, haters stop hating\u003C\u002Fem>.”\u003C\u002Fp>\n\n\n\n\u003Cp>\u003Cstrong>People have a hard time accepting foods from a lab\u003C\u002Fstrong>. In Michigan State University’s \u003Ca href=\"https:\u002F\u002Fwww.canr.msu.edu\u002Fnews\u002Fmsu-food-literacy-and-engagement-poll-wave-ii\">Food Literacy and Engagement Poll\u003C\u002Fa>, \u003Ca href=\"https:\u002F\u002Ftheconversation.com\u002Fwould-you-eat-meat-from-a-lab-consumers-arent-necessarily-sold-on-cultured-meat-100933\">The Conversation surveyed\u003C\u002Fa> over 2,100 Americans in 2018 asking, “\u003Cem>How likely would you be to purchase foods that look and taste identical to meat, but are based on ingredients that are produced artificially?\u003C\u002Fem>” The results were ambivalent. One-third of Americans said they would be likely to purchase cultured meat, with the other two-thirds veering toward caution. Forty-eight percent told the interviewers they’d be unlikely to buy this product.\u003C\u002Fp>\n\n\n\n\u003Ch2 class=\"wp-block-heading\">\u003Cstrong>Alternative foods of the future\u003C\u002Fstrong>\u003C\u002Fh2>\n\n\n\n\u003Cp>What if we put things in perspective and push them to the limit? Scientists say the traditional pathways of agriculture might collapse due to climate change and overproduction in the next 2-3 decades. For reasons of food security, experts and organizations responsible for nutrition are not only contemplating the idea of clean meat and other types of artificial foods, but also insect-eating. \u003C\u002Fp>\n\n\n\n\u003Cp>Around \u003Ca href=\"http:\u002F\u002Fwww.fao.org\u002Fnews\u002Fstory\u002Fen\u002Fitem\u002F175922\u002Ficode\u002F\">2 billion people\u003C\u002Fa> regularly eat insects as part of their diet, and over \u003Ca href=\"http:\u002F\u002Fwww.fao.org\u002Fdocrep\u002F018\u002Fi3253e\u002Fi3253e.pdf\">1,900 species\u003C\u002Fa> are edible. (According to the \u003Ca href=\"http:\u002F\u002Fnews.nationalgeographic.com\u002Fnews\u002F2013\u002F13\u002F130514-edible-insects-entomophagy-science-food-bugs-beetles\u002F\">National Geographic\u003C\u002Fa>, stinkbugs actually taste like apples.) The most commonly eaten bugs are beetles, caterpillars, bees, wasps and ants. Food labels are far from providing enough information about what is actually in the package. Although labelling of allergens is mandatory in most countries, factual data is often hidden behind mysterious E-s and numbers. Various tech devices promise a solution.\u003C\u002Fp>\n\n\n\n\u003Cp>And a solution is indeed needed. About 7.5% of the global population is allergic to certain foods. Over \u003Ca href=\"https:\u002F\u002Fwww.foodallergy.org\u002Fresources\u002Ffacts-and-statistics\" target=\"_blank\" rel=\"noreferrer noopener\">200,000 people\u003C\u002Fa> require emergency medical care every year due to allergic reactions to food in the U.S. alone. Food sensors, when they first appeared, came like life-savers for people with allergies.&nbsp;\u003C\u002Fp>\n\n\n\n\u003Cp>From time to time, we try to collect the most promising technologies to solve this issue. In our 2017 article, we listed \u003Ca rel=\"noreferrer noopener\" href=\"https:\u002F\u002Fmedicalfuturist.com\u002Ftop-8-technologies-combating-food-allergy\u002F\" target=\"_blank\">8 Technologies Combating Food Allergy\u003C\u002Fa>. Of those eight, only one is still standing (Nima) but hasn’t refreshed its Twitter page since 2018; 4 disappeared without a trace (Ally, Allerpal, Aibi, Rescufy), 2 still in research (Allergy Amulet, TellSpec) and one changed markets (Scio).\u003C\u002Fp>\n\n\n\n\u003Ch2 class=\"wp-block-heading\">\u003Cstrong>Too complex food can give you the itch\u003C\u002Fstrong>\u003C\u002Fh2>\n\n\n\n\u003Cp>Food scanning is a challenging issue. These ambitious companies have tried to help millions of people with food allergies. However, whether&nbsp;they can offer reasonable solutions and replace laboratory analyses is uncertain – especially since the food we eat today is often too complex.\u003C\u002Fp>\n\n\n\n\u003Cp>“\u003Cem>The composition of food can be very diverse. Measuring exactly what is on our plate can therefore be difficult if you do not know the parameter or compound you wish to measure,” \u003C\u002Fem>– says Dr Zoltán Kovács, associate professor of the Department of Measurements and Process Control Institute of Food Science and Technology at the Hungarian University of Agriculture and Life Sciences.\u003C\u002Fp>\n\n\n\n\u003Cp>The professor was involved in the development of Canadian \u003Ca href=\"https:\u002F\u002Fmedicalfuturist.com\u002Ftop-8-technologies-combating-food-allergy\u002F\" target=\"_blank\" rel=\"noreferrer noopener\">TellSpec\u003C\u002Fa>, a handheld food scanner company. He contributed to the experimental planning and model development to measure the food parameters of various food products. “\u003Cem>Generally, in food analysis, a wide arsenal of analytical methods is applied to determine certain quality parameters of food, often in a destructive manner, sometimes using highly costly chemicals and time-consuming techniques.” \u003C\u002Fem>To make the best of such measurements, it’s helpful to know what’s in the food&nbsp;– \u003Cem>before\u003C\u002Fem> the analysis.\u003C\u002Fp>\n\n\n\n\u003Cp>&nbsp;“\u003Cem>The so-called \u003C\u002Fem>\u003Ca rel=\"noreferrer noopener\" href=\"https:\u002F\u002Fwww.researchgate.net\u002Fpublication\u002F332363801_Food_identification_by_high_performance_liquid_chromatography_fingerprinting_and_mathematical_processing\" target=\"_blank\">\u003Cem>fingerprint method\u003C\u002Fem>\u003C\u002Fa>\u003Cem> can be used to obtain a universal „image” of the samples and is&nbsp;suitable for determining many independent parameters at once” \u003C\u002Fem>– Dr Kovács added on a possible solution.\u003C\u002Fp>\n\n\n\n\u003Cp>\u003Ca href=\"https:\u002F\u002Fpediatrics.aappublications.org\u002Fcontent\u002F142\u002F6\u002Fe20181235\">VIDEO\u003C\u002Fa>\u003C\u002Fp>\n\n\n\n\u003Cblockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\">\u003Cp>\u003Cstrong>\u003Cem>“Eat food. In 2009, a UC Berkeley professor of science and environmental journalism and \u003Ca href=\"https:\u002F\u002Fwww.bookdepository.com\u002FIn-Defense-of-Food-Michael-Pollan\u002F9780143114963\" target=\"_blank\" rel=\"noreferrer noopener\">author\u003C\u002Fa> Michael Pollan \u003Ca href=\"https:\u002F\u002Fwww.webmd.com\u002Ffood-recipes\u002Fnews\u002F20090323\u002F7-rules-for-eating\" target=\"_blank\" rel=\"noreferrer noopener\">was asked to talk\u003C\u002Fa> in an auditorium fully packed with CDC scientists about healthy eating. The professor has been criticising the U.S. food policies, and the reason for the invite was “\u003Cem>to bring new ideas to the national debate on food issues.” \u003C\u002Fem>However, although scientists then and there were mostly convinced, eating habits in the U.S. haven’t changed much since.&nbsp;\u003C\u002Fp>\n\n\n\n\u003Ch2 class=\"wp-block-heading\">\u003Cstrong>6+1 promising digital health technology devices against food allergens\u003C\u002Fstrong>\u003C\u002Fh2>\n\n\n\n\u003Ch5 class=\"wp-block-heading\">\u003Cstrong>We searched the market again to find promising technologies fighting food allergies. Yes, food composition is a complicated issue. These companies have prospective concepts. Today they promise a solution to food-related allergies. One day one of them will make up this promise and rise as champion.\u003C\u002Fstrong>\u003C\u002Fh5>\n\n\n\n\u003Ch3 class=\"wp-block-heading\">\u003Cstrong>1. SensoGenic – R&amp;D phase\u003C\u002Fstrong>\u003C\u002Fh3>\n\n\n\n\u003Cp>\u003Ca rel=\"noreferrer noopener\" href=\"http:\u002F\u002Fwww.sensogenic.com\u002F\" target=\"_blank\">SensoGenic\u003C\u002Fa> is a medical device using a bio-sensor that detects food allergens. The company aims to make eating safe for people with food allergies all over the world. Their digital diagnostics biosensor looks for allergen and antibody reactions with the fingerprint method. The test was supposed to run on smartphones, but currently, no app can be downloaded. Project Abbie&nbsp;–\u003C\u002Fstrong> \u003Cstrong>R&amp;D phase\u003C\u002Fstrong>\u003C\u002Fh3>\n\n\n\n\u003Cp>Harvard’s Wyss Institute partnered with \u003Ca href=\"https:\u002F\u002Fkeepsmilin4abbie.org\u002F\" target=\"_blank\" rel=\"noreferrer noopener\">KeepSmilin4Abbie Foundation\u003C\u002Fa> in doing research and development on anaphylaxis. \u003Ca href=\"https:\u002F\u002Fwyss.harvard.edu\u002Ftechnology\u002Fproject-abbie\u002F\" target=\"_blank\" rel=\"noreferrer noopener\">Project Abbie\u003C\u002Fa> aims to develop a wearable, non-invasive device that could sense anaphylaxis and automatically inject epinephrine in individuals who are unable to do so themselves. An offspring from the project, the \u003Ca href=\"https:\u002F\u002Fvimeo.com\u002F295591217\" target=\"_blank\" rel=\"noreferrer noopener\">abbieSense\u003C\u002Fa> tool, can detect histamine levels in human body fluids and determine the severity of an allergic reaction, which could help save the lives of patients with severe allergies. On the downside, there has been no news of the project since 2018.\u003C\u002Fp>\n\n\n\n\u003Cp>\u003Cstrong>3. FoodMarble – on the market\u003C\u002Fstrong>\u003C\u002Fp>\n\n\n\n\u003Cp>Last year I \u003Ca href=\"https:\u002F\u002Fwww.facebook.com\u002Fmedicalfuturist\u002Fphotos\u002Fim-testing-foodmarble-the-portable-breath-test-device-that-claims-to-help-millio\u002F2789584044469546\u002F\" target=\"_blank\" rel=\"noreferrer noopener\">tested and liked\u003C\u002Fa> \u003Ca href=\"https:\u002F\u002Ffoodmarble.com\" target=\"_blank\" rel=\"noreferrer noopener\">FoodMarble\u003C\u002Fa>, a breathalyser that works the other way around than all other food analysers: by checking the gases in the exhale. It analyses the level of hydrogens in the exhale to check for the level of hydrogen. The concept behind this tracker is to analyse digestion – in short, to see why you’re bloated. By tracking your daily consumption with the app, you can find the patterns and, thereby, the intolerances over time.\u003C\u002Fp>\n\n\n\n\u003Ch3 class=\"wp-block-heading\">\u003Cstrong>4. Allerguard –&nbsp; R&amp;D phase\u003C\u002Fstrong>\u003C\u002Fh3>\n\n\n\n\u003Cp>The concept of \u003Ca rel=\"noreferrer noopener\" href=\"https:\u002F\u002Fallerguardsystems.com\u002F\" target=\"_blank\">Allerguard\u003C\u002Fa> is radically different from all others. Instead of using a food sample, the company’s device analyses the \u003Cem>scent\u003C\u002Fem> of the food and alerts the user if a specific chemical signature is detected. It can thereby analyse an entire plate and not just a random sample. The company aims to use artificial intelligence to analyse the chemical structure of food. Although the company has a presence at startup events, there’s little news shared from the R&amp;D department.\u003C\u002Fp>\n\n\n\n\u003Ch3 class=\"wp-block-heading\">\u003Cstrong>5. Nima – on the market\u003C\u002Fstrong>\u003C\u002Fh3>\n\n\n\n\u003Cp>We \u003Ca href=\"https:\u002F\u002Fmedicalfuturist.com\u002Fdigital-health-tech-we-reviewed\u002F\" target=\"_blank\" rel=\"noreferrer noopener\">loved Nima\u003C\u002Fa>’s sleek designs and innovative approach from day one. The company launched two portable food sensors, and we tested both the \u003Ca href=\"https:\u002F\u002Fmedicalfuturist.com\u002Ffighting-against-a-small-enemy-the-nima-peanut-sensor-review\u002F\" target=\"_blank\" rel=\"noreferrer noopener\">peanut sensor\u003C\u002Fa> and the \u003Ca href=\"https:\u002F\u002Fmedicalfuturist.com\u002Ftesting-food-gluten-home-nima-sensor-review\u002F\" target=\"_blank\" rel=\"noreferrer noopener\">gluten sensor\u003C\u002Fa> with good results. However, we can’t be entirely happy: Nima hasn&#8217;t released anything since 2018, and there’s \u003Ca href=\"https:\u002F\u002Fwww.goodforyouglutenfree.com\u002Fnima-sensor-out-of-business\u002F\" target=\"_blank\" rel=\"noreferrer noopener\">apparently\u003C\u002Fa> also a shortage in testing capsules since the company was sold in 2020.
