With the advent of industrial farming and the food processing industry, consumer control over food has been lost – and we lost track of substances. Food labels are far from providing enough information about what is actually in the package. Although labelling of allergens is mandatory in most countries, factual data is often hidden behind mysterious E-s and numbers. Various tech devices promise a solution.\u003C\u002Fp>\n\n\n\n\u003Cp>And a solution is indeed needed. About 7.5% of the global population is allergic to certain foods. Over \u003Ca href=\"https:\u002F\u002Fwww.foodallergy.org\u002Fresources\u002Ffacts-and-statistics\" target=\"_blank\" rel=\"noreferrer noopener\">200,000 people\u003C\u002Fa> require emergency medical care every year due to allergic reactions to food in the U.S. alone. Food sensors, when they first appeared, came like life-savers for people with allergies.&nbsp;\u003C\u002Fp>\n\n\n\n\u003Cp>From time to time, we try to collect the most promising technologies to solve this issue. In our 2017 article, we listed \u003Ca rel=\"noreferrer noopener\" href=\"https:\u002F\u002Fmedicalfuturist.com\u002Ftop-8-technologies-combating-food-allergy\u002F\" target=\"_blank\">8 Technologies Combating Food Allergy\u003C\u002Fa>. Of those eight, only one is still standing (Nima) but hasn’t refreshed its Twitter page since 2018; 4 disappeared without a trace (Ally, Allerpal, Aibi, Rescufy), 2 still in research (Allergy Amulet, TellSpec) and one changed markets (Scio).\u003C\u002Fp>\n\n\n\n\u003Ch2 class=\"wp-block-heading\">\u003Cstrong>Too complex food can give you the itch\u003C\u002Fstrong>\u003C\u002Fh2>\n\n\n\n\u003Cp>Food scanning is a challenging issue. These ambitious companies have tried to help millions of people with food allergies. However, whether&nbsp;they can offer reasonable solutions and replace laboratory analyses is uncertain – especially since the food we eat today is often too complex.\u003C\u002Fp>\n\n\n\n\u003Cp>“\u003Cem>The composition of food can be very diverse. Measuring exactly what is on our plate can therefore be difficult if you do not know the parameter or compound you wish to measure,” \u003C\u002Fem>– says Dr Zoltán Kovács, associate professor of the Department of Measurements and Process Control Institute of Food Science and Technology at the Hungarian University of Agriculture and Life Sciences.\u003C\u002Fp>\n\n\n\n\u003Cp>The professor was involved in the development of Canadian \u003Ca href=\"https:\u002F\u002Fmedicalfuturist.com\u002Ftop-8-technologies-combating-food-allergy\u002F\" target=\"_blank\" rel=\"noreferrer noopener\">TellSpec\u003C\u002Fa>, a handheld food scanner company. He contributed to the experimental planning and model development to measure the food parameters of various food products. “\u003Cem>Generally, in food analysis, a wide arsenal of analytical methods is applied to determine certain quality parameters of food, often in a destructive manner, sometimes using highly costly chemicals and time-consuming techniques.” \u003C\u002Fem>To make the best of such measurements, it’s helpful to know what’s in the food&nbsp;– \u003Cem>before\u003C\u002Fem> the analysis.\u003C\u002Fp>\n\n\n\n\u003Cp>&nbsp;“\u003Cem>The so-called \u003C\u002Fem>\u003Ca rel=\"noreferrer noopener\" href=\"https:\u002F\u002Fwww.researchgate.net\u002Fpublication\u002F332363801_Food_identification_by_high_performance_liquid_chromatography_fingerprinting_and_mathematical_processing\" target=\"_blank\">\u003Cem>fingerprint method\u003C\u002Fem>\u003C\u002Fa>\u003Cem> can be used to obtain a universal „image” of the samples and is&nbsp;suitable for determining many independent parameters at once” \u003C\u002Fem>– Dr Kovács added on a possible solution.\u003C\u002Fp>\n\n\n\n\u003Cp>\u003Ca href=\"https:\u002F\u002Fpediatrics.aappublications.org\u002Fcontent\u002F142\u002F6\u002Fe20181235\">VIDEO\u003C\u002Fa>\u003C\u002Fp>\n\n\n\n\u003Cblockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\">\u003Cp>\u003Cstrong>\u003Cem>“Eat food. Not too much. Mostly plants.” \u003C\u002Fem>\u003C\u002Fstrong>\u003C\u002Fp>\u003Cp>\u003Cstrong>Michael Pollan\u003C\u002Fstrong>\u003C\u002Fp>\u003C\u002Fblockquote>\n\n\n\n\u003Cp>One of the solutions to food allergies would indeed be to decrease the complexity of food. In 2009, a UC Berkeley professor of science and environmental journalism and \u003Ca href=\"https:\u002F\u002Fwww.bookdepository.com\u002FIn-Defense-of-Food-Michael-Pollan\u002F9780143114963\" target=\"_blank\" rel=\"noreferrer noopener\">author\u003C\u002Fa> Michael Pollan \u003Ca href=\"https:\u002F\u002Fwww.webmd.com\u002Ffood-recipes\u002Fnews\u002F20090323\u002F7-rules-for-eating\" target=\"_blank\" rel=\"noreferrer noopener\">was asked to talk\u003C\u002Fa> in an auditorium fully packed with CDC scientists about healthy eating. The professor has been criticising the U.S. food policies, and the reason for the invite was “\u003Cem>to bring new ideas to the national debate on food issues.” \u003C\u002Fem>However, although scientists then and there were mostly convinced, eating habits in the U.S. haven’t changed much since.&nbsp;\u003C\u002Fp>\n\n\n\n\u003Ch2 class=\"wp-block-heading\">\u003Cstrong>6+1 promising digital health technology devices against food allergens\u003C\u002Fstrong>\u003C\u002Fh2>\n\n\n\n\u003Ch5 class=\"wp-block-heading\">\u003Cstrong>We searched the market again to find promising technologies fighting food allergies. Yes, food composition is a complicated issue. These companies have prospective concepts. Today they promise a solution to food-related allergies. One day one of them will make up this promise and rise as champion.\u003C\u002Fstrong>\u003C\u002Fh5>\n\n\n\n\u003Ch3 class=\"wp-block-heading\">\u003Cstrong>1. SensoGenic – R&amp;D phase\u003C\u002Fstrong>\u003C\u002Fh3>\n\n\n\n\u003Cp>\u003Ca rel=\"noreferrer noopener\" href=\"http:\u002F\u002Fwww.sensogenic.com\u002F\" target=\"_blank\">SensoGenic\u003C\u002Fa> is a medical device using a bio-sensor that detects food allergens. The company aims to make eating safe for people with food allergies all over the world. Their digital diagnostics biosensor looks for allergen and antibody reactions with the fingerprint method. The test was supposed to run on smartphones, but currently, no app can be downloaded. Project Abbie&nbsp;–\u003C\u002Fstrong> \u003Cstrong>R&amp;D phase\u003C\u002Fstrong>\u003C\u002Fh3>\n\n\n\n\u003Cp>Harvard’s Wyss Institute partnered with \u003Ca href=\"https:\u002F\u002Fkeepsmilin4abbie.org\u002F\" target=\"_blank\" rel=\"noreferrer noopener\">KeepSmilin4Abbie Foundation\u003C\u002Fa> in doing research and development on anaphylaxis. \u003Ca href=\"https:\u002F\u002Fwyss.harvard.edu\u002Ftechnology\u002Fproject-abbie\u002F\" target=\"_blank\" rel=\"noreferrer noopener\">Project Abbie\u003C\u002Fa> aims to develop a wearable, non-invasive device that could sense anaphylaxis and automatically inject epinephrine in individuals who are unable to do so themselves. An offspring from the project, the \u003Ca href=\"https:\u002F\u002Fvimeo.com\u002F295591217\" target=\"_blank\" rel=\"noreferrer noopener\">abbieSense\u003C\u002Fa> tool, can detect histamine levels in human body fluids and determine the severity of an allergic reaction, which could help save the lives of patients with severe allergies. On the downside, there has been no news of the project since 2018.\u003C\u002Fp>\n\n\n\n\u003Cp>\u003Cstrong>3. FoodMarble – on the market\u003C\u002Fstrong>\u003C\u002Fp>\n\n\n\n\u003Cp>Last year I \u003Ca href=\"https:\u002F\u002Fwww.facebook.com\u002Fmedicalfuturist\u002Fphotos\u002Fim-testing-foodmarble-the-portable-breath-test-device-that-claims-to-help-millio\u002F2789584044469546\u002F\" target=\"_blank\" rel=\"noreferrer noopener\">tested and liked\u003C\u002Fa> \u003Ca href=\"https:\u002F\u002Ffoodmarble.com\" target=\"_blank\" rel=\"noreferrer noopener\">FoodMarble\u003C\u002Fa>, a breathalyser that works the other way around than all other food analysers: by checking the gases in the exhale. It analyses the level of hydrogens in the exhale to check for the level of hydrogen. The concept behind this tracker is to analyse digestion – in short, to see why you’re bloated. By tracking your daily consumption with the app, you can find the patterns and, thereby, the intolerances over time.\u003C\u002Fp>\n\n\n\n\u003Ch3 class=\"wp-block-heading\">\u003Cstrong>4. Allerguard –&nbsp; R&amp;D phase\u003C\u002Fstrong>\u003C\u002Fh3>\n\n\n\n\u003Cp>The concept of \u003Ca rel=\"noreferrer noopener\" href=\"https:\u002F\u002Fallerguardsystems.com\u002F\" target=\"_blank\">Allerguard\u003C\u002Fa> is radically different from all others. Instead of using a food sample, the company’s device analyses the \u003Cem>scent\u003C\u002Fem> of the food and alerts the user if a specific chemical signature is detected. It can thereby analyse an entire plate and not just a random sample. The company aims to use artificial intelligence to analyse the chemical structure of food. Although the company has a presence at startup events, there’s little news shared from the R&amp;D department.\u003C\u002Fp>\n\n\n\n\u003Ch3 class=\"wp-block-heading\">\u003Cstrong>5. Nima – on the market\u003C\u002Fstrong>\u003C\u002Fh3>\n\n\n\n\u003Cp>We \u003Ca href=\"https:\u002F\u002Fmedicalfuturist.com\u002Fdigital-health-tech-we-reviewed\u002F\" target=\"_blank\" rel=\"noreferrer noopener\">loved Nima\u003C\u002Fa>’s sleek designs and innovative approach from day one. The company launched two portable food sensors, and we tested both the \u003Ca href=\"https:\u002F\u002Fmedicalfuturist.com\u002Ffighting-against-a-small-enemy-the-nima-peanut-sensor-review\u002F\" target=\"_blank\" rel=\"noreferrer noopener\">peanut sensor\u003C\u002Fa> and the \u003Ca href=\"https:\u002F\u002Fmedicalfuturist.com\u002Ftesting-food-gluten-home-nima-sensor-review\u002F\" target=\"_blank\" rel=\"noreferrer noopener\">gluten sensor\u003C\u002Fa> with good results. However, we can’t be entirely happy: Nima hasn&#8217;t released anything since 2018, and there’s \u003Ca href=\"https:\u002F\u002Fwww.goodforyouglutenfree.com\u002Fnima-sensor-out-of-business\u002F\" target=\"_blank\" rel=\"noreferrer noopener\">apparently\u003C\u002Fa> also a shortage in testing capsules since the company was sold in 2020. Allergy Amulet –&nbsp; R&amp;D phase\u003C\u002Fstrong>\u003C\u002Fh3>\n\n\n\n\u003Cp>This tiny portable device (available as a keyring, necklace or wristband) aims to use molecular imprinting to identify allergens in food. With a simple test, sensors find traces of allergens in the tested food sample within a minute. A blood test for food-related allergens from the comfort of your home is an advantage we won’t give up after the lockdowns. Imaware, a platform offering a range of at-home lab tests, including an \u003Ca rel=\"noreferrer noopener\" href=\"https:\u002F\u002Fwww.imaware.health\u002Fat-home-blood-test\u002Fallergy-test\" target=\"_blank\">allergy testing kit\u003C\u002Fa> does just that. The company’s blood drop test checks 28 food allergens in the blood (along with other allergens), providing a clinical lab result within 7 days.&nbsp;\u003C\u002Fp>\n\n\n\n\u003Cp>They also offer a \u003Ca href=\"https:\u002F\u002Fwww.imaware.health\u002Fceliac-disease-screening\" target=\"_blank\" rel=\"noreferrer noopener\">celiac disease screening test\u003C\u002Fa>, looking for gluten-related responses in your body, providing a lab analysis of 4 key biomarkers you can thereafter bring to your doctor if needed. Imaware is the first at-home blood testing company to have its data and methods \u003Ca rel=\"noreferrer noopener\" href=\"https:\u002F\u002Fwww.imaware.health\u002Fblog\u002Fscientific-community-validates-imaware-tm-at-home-blood-testing-platform\" target=\"_blank\">peer-reviewed by the scientific and medical community\u003C\u002Fa>.\u003C\u002Fp>\n\n\n\n\u003Ch5 class=\"wp-block-heading\">\u003Cstrong>Given the sheer number of people affected by food allergies, it is very likely that one company will solve all the issues above. But the complexity of the matter suggests that there is no magic wand or Harry Potter spell on food or patients. Ultimately, we need to change our eating habits and make sure \u003C\u002Fstrong>\u003Ca rel=\"noreferrer noopener\" href=\"https:\u002F\u002Fwww.cell.com\u002Fcell\u002Ffulltext\u002FS0092-8674(20)31677-9\" target=\"_blank\">\u003Cstrong>our choices are sustainable\u003C\u002Fstrong>\u003C\u002Fa>\u003Cstrong> for ourselves and the planet. Not to become the next world champion, but to better understand the language of A.I. or the language of anticipation.\u003C\u002Fp>\n\n\n\n\u003Cp>While on this journey, I also looked into the history of the board game and became convinced that it serves as the perfect metaphor for what is coming to healthcare. With their similar backgrounds and the integration of A.I. in the fields, their transformation will also bear similarities.&nbsp;\u003C\u002Fp>\n\n\n\n\u003Cp>And by looking into the transformation that A.I. brought about to chess, we can derive insights into how this upcoming change will happen in medicine. This is what we will be looking at in this article.\u003C\u002Fp>\n\n\n\n\u003Ch2 class=\"wp-block-heading\">\u003Cstrong>The shared history between medicine and chess\u003C\u002Fstrong>\u003C\u002Fh2>\n\n\n\n\u003Cp>Although from different eras, both chess and medicine originate from ancient times. In the 6th century CE for the former and as far back as 400 BCE for the latter if we consider the time of Hippocrates or the &#8220;Father of Medicine.&#8221; For centuries, both disciplines were led by intellectuals in their respective ivory tower. This tightly controlled aspect was because they both require exceptional skills in anticipation and strategic vision for successful execution.\u003C\u002Fp>\n\n\n\n\u003Cp>For instance, if a patient has certain symptoms, one must know what effects a treatment will have on that patient before administering it. Similarly, a professional chess player chooses a specific opening move to get a specific response from the opponent. This technology has disrupted chess more quickly than medicine since the board game involves fewer variables than medicine.&nbsp;\u003C\u002Fp>\n\n\n\n\u003Ch5 class=\"wp-block-heading\">\u003Cstrong>As such, the impact A.I. had on chess can be more easily analysed;\u003C\u002Fstrong> \u003Cstrong>and this can give us insights into what awaits medicine.\u003C\u002Fstrong>\u003C\u002Fh5>\n\n\n\n\u003Ch2 class=\"wp-block-heading\">\u003Cstrong>How A.I. transformed chess\u003C\u002Fstrong>\u003C\u002Fh2>\n\n\n\n\u003Cp>The book \u003Ca rel=\"noreferrer noopener\" href=\"https:\u002F\u002Fwww.linkedin.com\u002Fposts\u002Fbertalanmesko_themedicalfuturist-digitalhealth-future-activity-6798622963894669312-1kzR\u002F\" target=\"_blank\">\u003Cem>Man vs Machine\u003C\u002Fem>\u003C\u002Fa> brilliantly describes the entire evolution of chess machines. It begins with \u003Ca href=\"https:\u002F\u002Fen.wikipedia.org\u002Fwiki\u002FWolfgang_von_Kempelen\">Wolfgang von Kempelen\u003C\u002Fa>&#8216;s late 18th-century machine, \u003Ca rel=\"noreferrer noopener\" href=\"https:\u002F\u002Fen.wikipedia.org\u002Fwiki\u002FMechanical_Turk\" target=\"_blank\">The Turk\u003C\u002Fa> (a mechanical illusion that had an actual chess player hiding inside); then explores the first actual, yet rudimentary machines; and arrives at contemporary A.I. algorithms.\u003C\u002Fp>\n\n\n\n\u003Cp>In fact, nowadays, it is such algorithms that reign supreme at the discipline and not humans.&nbsp;Google’s AlphaZero and Stockfish are the two A.I. that \u003Ca rel=\"noreferrer noopener\" href=\"https:\u002F\u002Fwww.theringer.com\u002Ftech\u002F2018\u002F11\u002F8\u002F18069092\u002Fchess-alphazero-alphago-go-stockfish-artificial-intelligence-future\" target=\"_blank\">compete between themselves\u003C\u002Fa> for the #1 spot. The beginning of their rule began in 1997: when IBM’s supercomputer Deep Blue \u003Ca rel=\"noreferrer noopener\" href=\"http:\u002F\u002Fmedicalfuturist.com\u002Fibm-watson-is-the-stethoscope-of-the-21st-century\u002F\" target=\"_blank\">beat Garry Kasparov\u003C\u002Fa>, the world’s best chess player at the time. Experts thought that this would spell the doom of the board game; after all, who would want to play a game against an unbeatable A.I. that only gets better after each game?\u003C\u002Fp>\n\n\n\n\u003Cp>But rather than ward humans away from the discipline altogether, A.I. ushered a new era in chess. Today, more people than ever &#8211; \u003Ca rel=\"noreferrer noopener\" href=\"https:\u002F\u002Fwww.chess.com\u002Farticle\u002Fview\u002Fhow-many-chess-players-are-there-in-the-world\" target=\"_blank\">some 600 million\u003C\u002Fa> &#8211; play chess regularly. Chess coaches use the technology to train their students. Even spectators enjoy a better experience of watching tournaments with live evaluation from chess engines that give a glimpse of what chess grandmasters have in mind.\u003C\u002Fp>\n\n\n\n\u003Cp>\u003Cstrong>Today, chess doesn&#8217;t exist without such technologies; especially A.I.\u003C\u002Fstrong> Literally no player can play at a high level without working alongside computers; while knowing all too well, they won’t reach the A.I.’s level.\u003C\u002Fp>\n\n\n\n\u003Ch2 class=\"wp-block-heading\">\u003Cstrong>A shared future\u003C\u002Fstrong>\u003C\u002Fh2>\n\n\n\n\u003Cp>This radical transformation &#8211; where A.I. and chess players collaborate &#8211; is one that chess grandmasters wouldn’t have expected some decades ago. However, this partnership did not happen overnight but took several decades to reach this point. From distrust through curiosity to collaboration, the A.I.-physician relationship will follow such a transition before becoming mainstream.\u003C\u002Fp>\n\n\n\n\u003Ch2 class=\"wp-block-heading\">\u003Cstrong>What awaits medicine\u003C\u002Fstrong>\u003C\u002Fh2>\n\n\n\n\u003Cp>At first, physicians will laugh at the medical evaluations A.I. can make. This is because some are tested only \u003Ca rel=\"noreferrer noopener\" href=\"https:\u002F\u002Fmedicalfuturist.com\u002Fbioethical-issues\u002F\" target=\"_blank\">on controlled datasets and ideal conditions\u003C\u002Fa> not representative of clinical realities. But as their analyses get refined over time with better data, these algorithms will start coming up with \u003Ca rel=\"noreferrer noopener\" href=\"https:\u002F\u002Fmedicalfuturist.com\u002Fthe-curious-case-of-a-i-discovering-unusual-associations-in-medicine\u002F\" target=\"_blank\">unique and interesting medical insights\u003C\u002Fa>. Policy makers will be able to better organize healthcare with the astronomical amount of data that A.I. can handle.&nbsp;\u003C\u002Fp>\n\n\n\n\u003Cp>As such, it’s not that A.I. will put healthcare professionals out of their jobs, but those doctors who don’t use A.I. will be replaced by those who do. Just like chess took a new dimension with A.I., a similar scenario is likely to unfold in the field of medicine.
